Thịt hến với vị ngọt tự nhiên và hàm lượng dinh dưỡng cao thường được chị em sử dụng chế biến thành nhiều món ăn hấp dẫn như hến xào miến, hến xào sả ớt, hến xào xúc bánh đa… Trong bài viết sau đây, Học vào Bếp sẽ hướng dẫn cho bạn cách làm các món hến xào ngon chuẩn vị miền Trung nhé!
Trong thịt hến có chứa nhiều dưỡng chất quan trọng có ích cho sức khỏe như Tryptophane, Lysine, Lecithin, Histidine… Không chỉ vậy, theo Đông y, thịt hến có tính hàn, không độc, có công dụng lợi tiểu, thanh nhiệt, mát gan, hoạt tràng… Hãy cùng xem với nguyên liệu này chúng ta sẽ chế biến được những món ăn nào nhé!
Hến xào sả ớt
Nguyên liệu
- 1kg hến
- 1 củ hành tây
- Sả cây, gừng, ớt
- Rau răm, ngò rí
- Hành khô, tỏi
- 100g đậu phộng
- Nước mắm, hạt nêm, tiêu xay, dầu ăn, bột ngọt, đường

Cách làm hến xào sả ớt
Bước 1: Sơ chế nguyên liệu
– Hến khi mua về, bạn ngâm hến với nước cho vào vài lát ớt để hến nhả hết cặn bẩn. Sau đó, bạn vớt hến để ráo. Rồi nấu sôi nước, cho hến vào luộc, khi thịt hến nổi lên mặt nước, bạn vớt ra và cho vào chén riêng.
– Hành khô và tỏi bạn đem bóc bỏ vỏ, băm nhuyễn.
– Rau răm, ngò rí rửa sạch, cắt nhuyễn.
– Ớt thái lát.
– Hành tây bóc vỏ, rửa sạch, cắt lát mỏng.
– Sả băm nhuyễn, gừng gọt vỏ thái sợi.
– Đậu phộng bạn rang vàng rồi làm sạch vỏ sau đó giã nhỏ.
Bước 2: Xào hến
– Bạn cho dầu ăn vào chảo, cho hành khô và tỏi băm vào phi thơm.
– Tiếp đến, bạn cho sả, gừng ớt vào đảo đều. Khi nguyên liệu dậy mùi thơm, bạn cho hến vào xào nhanh với lửa lớn.
– Nêm nếm với 1 muỗng hạt nêm, 1 muỗng nước mắm, ½ muỗng đường, ½ muỗng bột ngọt cho vừa ăn rồi xào đều cho hến ngấm gia vị.
Bước 3: Hoàn thành
Khi hến vừa chín tới, bạn cho hành tây vào xào chung. Khoảng 2 phút bạn cho tiếp rau răm vào đảo đều thì tắt bếp.
Vậy là hoàn thành, bạn cho hến xào sả ớt ra đĩa, cho ngò rí lên và rắc thêm đậu phộng giã lên trên là thưởng thức được rồi đấy!

- 500g thịt hến
- Miến
- 100g mộc nhĩ
- Hạt nêm, đường, bột ngọt, dầu ăn
- Hành khô, hành lá, ngò rí

Cách làm hến xào miến
Bước 1: Sơ chế nguyên liệu
– Hến khi mua về, bạn ngâm hến với nước vo gạo để hến sạch chất bẩn. Tiếp theo, vớt để ráo và cho hến vào luộc, khi thịt hến tách ra khỏi vỏ, bạn vớt ra và để riêng.
– Mộc nhĩ đem ngâm với nở, cắt chân, thái sợi nhỏ.
– Hành khô bóc vỏ, băm nhỏ.
– Miến bạn đem ngâm với nước lạnh khoảng 15 phút. Sau đó, cho miến chần sơ với nước sôi rồi vớt ra, cho vào nước lạnh để miến không bị dính.
– Hành lá, ngò rí rửa sạch, băm nhỏ.
Bước 2: Xào hến
Bạn cho dầu ăn và hành khô băm vào chảo phi thơm, rồi cho mộc nhĩ vào xào. Khoảng 2 phút, bạn cho thịt hến vào. Rồi nêm nếm với ½ muỗng hạt nêm, ½ muỗng đường, chút bột ngọt rồi đảo đều lên.
Bước 3: Miến xào hến
Sau cùng, bạn cho miến vào đảo chung với hến và mộc nhĩ. Xào với lửa lớn, đến khi miến quyện vào hến là được. Bặn tắt bếp, rắc hành ngò băm vào cùng ít tiêu là thưởng thức được rồi đấy!

Nguyên liệu hến xào xúc bánh đa
- 300g thịt hến làm sạch
- 1 củ hành tây
- Sả, gừng, ớt
- Rau răm
- Hành khô
- Đậu phộng
- Bánh đa
- Dầu ăn, đường, hạt nêm, bột ngọt, tiêu

Cách làm hến xào xúc bánh đa
Bước 1: Sơ chế nguyên liệu
– Thịt hến bạn đem rửa nhiều lần với nước lạnh, rồi đem chần sơ với nước sôi, vớt để ráo.
– Hành khô bóc vỏ, băm nhỏ.
– Rau răm rửa sạch, cắt nhuyễn.
– Hành tây bóc vỏ, cắt mỏng.
– Sả băm nhuyễn, gừng thái chỉ, ớt thái lát.
– Đậu phộng đem rang vàng, giã nhuyễn.
Bước 2: Xào hến
Bạn cho dầu ăn vào chảo, khi dầu nóng, bạn cho tiếp hành khô, ớt, sả, gừng vào xào cho dậy mùi. Tiếp đến, bạn cho hến vào xào cùng, vặn lửa vừa.
Bước 3: Nêm nếm
Bạn nêm hến xào với 1 muỗng nước mắm, ½ muỗng hạt nêm, ½ muỗng đường, ½ muỗng bột ngọt cho vừa ăn. Sau đó, khi hến chín, bạn cho hành tây và rau thơm vào đảo khoảng 2 phút thì tắt bếp.
Bước 4: Hoàn thành
Bạn cho hến ra đĩa, rắc đậu phộng và tiêu lên trên. Khi ăn, bạn ăn kèm với bánh đa. Nếu không có bánh đa bạn có thể thay thế bằng bánh phồng tôm.
