Nguyên liệu chính của món ăn là những thực phẩm giàu chất dinh dưỡng. Măng tây còn được gọi là “hoàng đế” của các loại rau xanh và có 3 loại tương ứng với các màu sắc: xanh, trắng, tím. Ngoài chứa các chất như: chất xơ, protein, gluxits, vitamin (A, C, K, B2, B6,…) thì măng tây còn cung cấp Inulin – có tác dụng rất tốt cho hệ tiêu hóa đường ruột. Hơn nữa, trong măng tây có đến ¼ khối lượng là các khoáng chất cần thiết cho cơ thể: canxi, kali, kẽm, magie. Vì những tác dụng tốt cho sức khỏe mà măng tây dần trở nên phổ biến và được sử dụng nhiều trong ẩm thực ở nước ta.
Thịt bò từ lâu đã được đánh giá là loại thực phẩm tốt cho sức khỏe. Với khẩu phần ăn hợp lí sẽ giúp bạn cung cấp đầy đủ chất sắt, vitamin B12, protein cho cơ thể để hỗ trợ tăng khả năng miễn dịch, phục hồi sức khỏe sau suy nhược, cải thiện tình trạng thiếu máu và phát triển cơ bắp.
Măng tây xào thịt bò là một món ăn tuy đơn giản nhưng hương vị lạ miệng. Sự kết hợp giữa độ giòn sần sật của măng tây và vị ngọt, mềm của thịt bò sẽ mang lại cho gia đình bạn một bữa ăn thơm ngon, giàu dinh dưỡng.
Hướng Dẫn Thực Hiện Món Ăn
Nguyên liệu
- Măng tây: 300g
- Thịt thăn bò: 200g
- Tỏi băm: 1 muỗng canh
- Dầu ăn: 1 muỗng canh
- Gia vị: đường, muối, tiêu, bột nêm,…
Cách thực hiện
Bước 1: Sơ chế nguyên liệu
Thịt bò sau khi mua về đem rửa sạch, thái miếng mỏng. Sau đó cho vào tô ướp với 1 thìa cafe dầu ăn, ½ thìa cafe tiêu, ½ thìa cafe hạt nêm và 1 chút tỏi băm. Trộn đều và để khoảng 20 phút cho thịt thấm gia vị.
Chọn mua những cây măng tây non, màu xanh nhạt thì khi xào mới giòn và không bị xơ. Bỏ phần gốc già và bào vỏ thật mỏng khoảng 1/3 thân măng tính từ gốc trở lên, còn phần ngọn giữ nguyên. Ngâm với nước muối pha loảng để loại bỏ đất cát, rửa lại với nước sạch và để ráo sau đó cắt thành từng đoạn dài khoảng 5-7cm.

Bước 2: Chế biến
Đầu tiên, bạn nấu nước để luộc sơ măng tây, thêm đường vào nồi với tỉ lệ 1 lít nước tương ứng 5g đường. Công đoạn này giúp măng tây sau khi xào vừa giữ được màu xanh vừa giòn, ngọt. Khi nước sôi, bạn cho măng tây vào và đậy nắp. Luộc măng tây trong 1 phút thì vớt ra và cho vào nước đá sau đó để ráo.
Tiếp theo, bạn cho dầu ăn vào chảo rồi phi thơm tỏi băm, xào thịt bò nhanh tay với lửa lớn. Khi thịt bò săn lại thì bạn cho ra dĩa, phần nước ngọt tiết ra vẫn để lại trong chảo. Tiếp tục cho măng tây vào xào, nêm nếm gia vị vừa miệng. Khi măng gần chín thì cho thịt bò vào và xào đều tay thêm 2 phút thì tắt bếp.
Bước 3: Trình bày và thưởng thức
Cho thành phẩm ra dĩa, rắc một chút tiêu xay lên trên để tăng hương vị, thưởng thức khi còn nóng và ăn cùng cơm trắng sẽ rất ngon. Món ăn đạt chuẩn khi vẫn giữ được độ mềm của thịt bò, màu xanh và độ giòn của măng tây cùng hương vị vừa miệng.

- Để tiết kiệm thời gian chế biến, bạn nên chọn măng tây thân mảnh. Về hương vị thì thân mảnh và thân mập đều ngon như nhau. Chọn những cây tươi xanh, cứng, không bị mềm và bị đổi màu.
- Luộc sơ măng tây với đường thay vì muối sẽ giúp bạn giữ được độ ngọt, màu sắc cũng như giá trị dinh dưỡng. Măng tây sau khi luộc sơ ngâm với nước đá để không bị thâm và giòn hơn.
